Foundry Owner To Open Second Restaurant On Melrose

According to a story in the Los Angeles Times, The Foundry Restaurant owner Eric Greenspan revealed plans to purchase a spot right next to his current location and open up a new place called "Greenspan 's Grilled Cheese..

“What I’m trying to give people is creative, inexpensive, chef-driven food with that fun, campy feel,” he says. Greenspan’s signature sandwich that won the Grilled Cheese Invitational, now named the Champ (short rib with Taleggio and apricot caper puree) will be available along with a few other signatures, which are currently in development.

Some of those include the Hippie (soy cheese, veggies and sprouts on walnut bread), the Medianoche (mustard, pickles and corned beef) and the Buffalo Chicken (confit chicken, bleu cheese and a carrot and celery slaw). The price point will hover between $10 and $15. They’ll also be serving old-school seltzer drinks such as lime rickeys and chocolate egg creams, plus latkes, tater tots and a variety of soups — available in cup, bowl or “dip” size.

Greenspan also said that he’s toying with the idea of opening a Greenspan Gordita stand, but that he's taking things one step at a time. “The last thing I want to do is be a chef that’s constantly jet-setting and on the run. People want to know that I’m there. I love being in the kitchen,” he says.
